What You Need
- 2 medium Mo Qua (fuzzy melons)
- 1 tablespoon salt
- 10 1/2 ounces firm tofu, well-drained
- 4 tablespoons salad oil
- 12 ounces Corned Beef
- 2 eggs
- 1 dash pepper
What to Do
Cut the mo qua into halves lengtwise and remove the seeds, then thinly slice each half. Sprinkle mo qua slices with salt, rubbing salt into slices. Let stand 10 minutes, then rinse in cold water, drain and pat dry.
Break tofu in bite-sized pieces and pat dry.
Heat 2 tablespoons of oil in a skillet and fry tofu until lightly browned. Remove tofu and set aside. Wipe skillet clean.
Heat remaining 2 tablespoons of oil in skillet and cook mo qua slices until nearly done. Stir in corned beef, tofu, eggs and pepper. Cover, turn off heat and let stand for 1 minute.
