What You Need
- 3 eggs
- 3/4 cup vegetable oil
- 1 1/2 cups sugar
- 1 teaspoon vanilla extract
- 2 cups peeled, grated raw fuzzy melon
- 1 1/4 cups whole wheat flour
- 1 1/4 cups unbleached all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground cardamom
- 1 cup shelled walnuts, chopped (optional)
What to Do
Preheat your oven to 350F and butter a 9x5x3-inch loaf pan. Beat eggs, oil, sugar and vanilla with an electric mixer in a large bowl about 5 minutes, until light and thick. Gently squeeze any excess moisture out of the grated fuzzy melon, then fold into egg mixture.
Sift dry ingredients together, then fold into wet ingredients until just combined. Fold in walnuts.
Pour batter into buttered loaf pan and bake on center rack approximately 1 hour, 15 minutes (until a cake tester comes out clean). Allow loaf to cool slightly before removing from the pan and then cool completely on a wire rack.
